CARROT CAKE OATMEAL

This carrot cake oatmeal is one of my favorite ways to enjoy my oats. The oatmeal is creamy and sweet, and the raisins and the walnuts add some texture. Enjoy it as a healthy, nutritious, and most importantly, delicious, breakfast or snack.

INGREDIENTS
The Carrot Oatmeal
1 dl oats, 35 g
2 dl water, 200 g
0.5 dl carrot, finely grated
1 tbsp walnuts, chopped
1 tbsp raisins
1 tsp maple syrup
0.5 tsp cinnamon
1 pinch of nutmeg
1 pinch of salt
Frosting
1 tbsp cream cheese
1 tbsp milk
1 tsp maple syrup
Toppings
maple syrup
walnuts, chopped
INSTRUCTIONS:
Into a small saucepan over medium-high, add oats, water, finely grated carrot, chopped walnuts, raisins, maple syrup, cinnamon, nutmeg, and salt.
Let come to a simmer and let cook while stirring once in a while until thickened to your liking.
Meanwhile make the frosting by combining cream cheese, milk, and maple syrup.
Pour the oatmeal into a bowl and top with the frosting, maple syrup and some chopped walnuts,
