CARROT CAKE BAKED OATS

Servings: 1 ramekin
This Carrot Cake Baked Oats is so delicious and easy to make. Perfect for a healthy and fun breakfast or snack!
(This recipe can be made in the air fryer as well, which I recommend since it then requires no preheating the oven and it cooks much faster.)

INGREDIENTS
The Carrot Cake Oat Batter
1 dl / 40 g / 0,4 cups whole rolled oats,
0.5 dl / 50 g / 0.2 cups milk
2 tbsp / 30 g plain yogurt
0.5 tsp baking powder
0.5 tsp cinnamon
2 tsp maple syrup
1 pinch of salt
2 tbsp carrot, finely grated
1 tbsp raisins
1 tbsp walnuts, chopped
The Frosting
1 tbsp cream cheese
1 tsp milk
1 tsp maple syrup
Toppings
walnuts, chopped
INSTRUCTIONS:
Preheat the oven to 180C/355F.
Into a blender, add the oats, milk, yogurt, baking powder, cinnamon, maple syrup, and salt, and blend until smooth.
Add the finely grated carrot, raisins, and chopped walnuts and stir well with a spatula.
Pour the batter into a ramekin.
Bake for about 25 minutes (or air fry at 170 C / 338 F for about 15 minutes to save time).
Meanwhile, make the frosting by combining cream cheese, milk, and maple syrup.
Top the oats with the frosting and some chopped walnuts.
