SAFFRON BUN BAKED OATS

This baked oat is inspired by my favorite Swedish Christmas treat, the Saffron Bun, also known as Lussekatt. Inside, it has raisins, which add texture and extra sweetness.

INGREDIENTS
40 g / 1 dl / 0.4 cups whole rolled oats
50 g / 0.5 dl / 0.2 cups milk
30 g / 1 egg white (can be replaced with 2 tbsp plain yogurt)
0.5 tsp baking powder
0.5 ml saffron powder
2-3 tsp maple syrup
1 pinch of salt
1 tbsp raisins
INSTRUCTIONS:
Into a blender, add the oats, milk, egg white, baking powder, saffron powder, maple syrup, and salt, and blend until smooth.
Add the raisins and give it a stir using a spatula.
Pour the batter into a ramekin.
Air fry at 170 C / 338 F for approximately 17 minutes, or bake in the oven at 180 C / 355 F for 20-25 minutes.
