These cookies are hands down the best I’ve ever made! With a mix of nuts, seeds, dried fruits, and chocolate, they boast a delightful texture and a wonderfully unique sweetness. These are a MUST TRY!

INGREDIENTS

2 tbsp / 35 g peanut butter  
2 tbsp / 35 g maple syrup

2 tbsp / 12 g whole rolled oats
1 tbsp / 7 g oat flour
1 tbsp / 7 g almond flour

0.5 dl / 28 g mixed nuts, chopped
1 tbsp / 6 g shredded coconut
1 tbsp / 10 g raisins
1 tbsp / 12 g chia seeds
1 tbsp / 10 g sunflower seeds
1 tbsp / 10 g white chocolate, chopped
1 tbsp / 10 g dark chocolate, chopped

INSTRUCTIONS:

Preheat the oven to 155 C / 310 F and line a baking sheet with parchment paper.

In a bowl, mix together the peanut butter and maple syrup.

Add the oats, oat flour, and almond flour, and stir with a spatula until well combined.

Next, add the chopped mixed nuts (I used almonds, cashews, and pistachios), shredded coconut, raisins, chia seeds, sunflower seeds, and chopped white and dark chocolate. Stir until everything is evenly combined.

Roll the mixture into 8 balls and flatten them slightly until they are about 1-1.5 cm thick.

Place the cookies on the prepared baking sheet and bake for approximately 20 minutes.

Once baked, remove from the oven and allow the cookies to cool completely on the pan.
